Every weekend throughout December, Chef Joel Labute is sharing stories from his Christmas past... in the most delicious way!


mémé’s sweet potatoes

slow roasted sweet potato, pickled onion, fried brussels sprout leaves, cranberry, spiced marshmallow

Chef Joel: This is a play on my mother Audrey LaBute’s sweet potatoes & marshmallows she makes every Christmas. It was the only vegetable dish I cared to eat as a child.


boxing day beef wellington

craft cut beef tenderloin wellington, mushroom whipped potatoes, glazed carrots, beef gravy

Chef Joel: I cooked this dish for my very first Christmas as a father & family man. I cherish this memory, as I was so proud to feed my new growing family & friends.


the bûche de noël from hell

traditional rolled marble cake layered with milk chocolate mousse, glazed with white chocolate, chocolate bark, cranberry, mint & macha powder

Chef Joel: As a young cook, I attempted this dessert with my two sisters. It resulted in a full sibling breakdown. In the end my mother’s kitchen was destroyed, but our bûche de noël looked amazingly perfect.
